Korean Beef Bowls

It’s been a hot minute since I shared a new recipe. Since most of my favorite recipes are included in my newsletter and resources tab, I haven’t felt the need to create more or overshare. But I couldn’t help it with this one.

BRAIN bowls are my obsession. This is the way I can maximize nutrient density while also making sure that my food is tasty and filling. Eating is a sensory experience that bring safety to the nervous system. I want as many of my senses engaged in the process as possible. This recipe is a perfect example. Per usual, there are so many other ways you can adapt this recipe to your own needs.

You’ll need:

  • Jasmine rice
  • 1 package grass-fed ground beef
  • Cucumbers
  • Shredded carrots
  • Green onions
  • Sesame seeds
  • Any other veggies you like (I used roasted brussels sprouts here)
  • Optional: kimchi

Sauce for Korean beef:

In a small bowl or measuring cup, whisk together:

  • 1/4 cup coconut aminos
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon rice wine vinegar
  • 1/2 tablespoon sesame oil
  • 1 tablespoon coconut sugar

Directions:

  1. Cook ground beef in a skillet until cooked through.
  2. Get rice cooking according to package directions. (Add a tablespoon of coconut oil as water boils to increase prebiotic resistant starch and cut calories and glycemic load)
  3. Pour the sauce mixture over cooked beef, simmer. Add whites of green onions.
  4. When rice is ready, assemble your bowl: rice, beef, thinly sliced cucumbers, shredded carrots, green onions, sesame seeds, and other veggies of choice. Roasted brussels sprouts or broccoli go great with this!

Optional probiotic and flavor enhancer: add a little kimchi to the bowl!

This meal was a hit with all the people in my house, and it was a nice change-up from egg roll in a bowl or ground beef taco bowls, which we tend to rotate regularly.
